The cream is stored for three days before traditionally churning it into butter, the butter is then washed with ice cold water before being extruded and then it is packed by hand. Previously, you could only find our butter in such places as the QE2. Now you can get this award-winning butter, freshly churned and slightly salted, in a handy 200g hand packed roll. A real hit with our Farmers’ Markets clientele. South Downs Butter is also available unsalted and in 2kg tubs.
South Downs Butter can be frozen and has a fresh shelf life of 3 to 6 weeks - ideal for use at home and within the retail trade. Endorsed by many quality local producers.

I used Bookhams butter for making an apple crumble for friends the other day. The result was amazing, it tasted so much richer and creamier than when I normally make it.

Sweet Potato, Butternut Squash, Chilli and Twineham Grange Vegetarian Pasta Cheese Soup
Serves 4
25g Southdowns Butter
1 clove garlic, crushed
225g Sweet Potato
1 Butternut Squash, diced
½ Red Chilli, finely diced (keep seeds in if you like if hot!)
750ml Vegetable Stock
1 heaped tablespoon Vegetarian Pasta Cheese, finely grated
125ml double cream
Salt and freshly ground black pepper
Cooking time, approximately 50 minutes
Melt the butter in a large saucepan and sweat off the garlic, sweet potato, and butternut squash, cover and cook for ten minutes.
Add the finely diced red chilli and cook for a further minute.
Add the vegetable stock and bring to the boil, cover and simmer for a further twenty minutes until the vegetables are tender.
Allow to cool, then stir in the Vegetarian Pasta Cheese and cream and blend with a food processor until smooth. Check seasoning to taste and gently reheat for 2 minutes to serve.
Serve with warm Granary Bread with lashings of Southdowns butter. Delicious!

Butter – the everlasting delight of the gourmand, the faithful ally of the culinary arts, the constant symbol of good living.
Through time and across the globe, butter has had a sacred quality. From the ancient Fertile Crescent to the present day, butter has symbolized the powerful, life giving and sacred, the good, the happy, the healthy and pure. It has sustained lives, cultures and civilizations for millennia.
Butter is a culinary treasure as old as King Tut’s tomb. "She brought forth butter in a lordly dish" (Judges 5:25). A jug of wine, a loaf of bread – and butter! Pure butter like ours is produced today essentially as it was in King Tut’s time, though we use milk from cows instead of camels or water buffaloes.
A majority of butter you find in shops today is made using continuous butter makers. The cream is basically forced into butter within a few minutes. Unlike our traditionally churned butter, it is devoid of colour and taste. We allow the cream to mature over a couple of days and then wash the butter with ice cold water, resulting in a rich creamy butter that tastes like butter used to taste.

We use two forms of delivery; royal mail 1st class for orders up to 2.5kg and for orders over 2.5kg, we use Citylink over night couriers.
Our UK mainland postage and packaging rate is based upon weight. Starting at £2 for a single wedge and rising to £6, however orders over £40 are delivered free. The total shipping charge is automatically calculated as you add each item to your order and is displayed top right of your screen.
